If you’re planning to add parsley, oregano, sage or whatever, add them only after taking the bread out from the oven; put them on top of the garlic bread and cover. This is a better way of “cooking” the leafy condiments in order to preserve their taste and nutrients. Don’t overcook them in the oven.  

You can use a dash of onion leaves instead of parsley or oregano.  

Another garlic bread recipe that may appeal to you is using pasta sauce as your garlic bread filling. You can use the canned tomato paste and add ground meat and the other ingredients or use fresh tomato instead. Garlic bread will taste better especially if you grate some cheese over it.
