Garlic Scapes: The Tamer Side of Garlic!
Not many people know about the importance of garlic scapes or know one when they see it. They
are nutritious, full of flavor and are a good additional ingredient to so many recipes. On its own it can be an
outstanding side dish. They are the stalk of garlic bulbs if you want to see them. They begin as
bent stalks and will continually straighten up as they grow more mature. You can use the stalk as food except for
the parts that are nearest the bulb. They are very hard already. They don’t look very nice but once you become
familiar with them, you’ll find their taste pretty agreeable and they can be a good addition to your recipes.
The scapes can be cut before harvesting and they are sold in the market tied in bundles. They are
green and they’ll remind you of the squid or octopus because of their appearance. You can cook them by means of
stir-fry alone or with other vegetables. Some would slice them; add some small size skinned shrimps and lettuce.
Panfry until they are cooked. You may add peas or beans, whichever suits you. Use canola, corn or olive oil when
cooking and use from low to medium fire only. Don’t deep fry.
You can also use it when frying fish or meat. Fry in medium or a little high fire and slowly
add the soy sauce when the food is almost cooked and cover immediately. Slice onion leaves finely and just when
you’re about to remove it from the fire, open the pan, sprinkle the leaves on top but don’t stir. Cover up again
and turn off the fire. You can add more ingredients prior to cooking to the dish. Use coconut oil as you’re cooking
oil but sparingly.
If you want just a tinge of garlic without the smell and the
clove, the scrape can very well take its place. It’ll serve the purpose to some extent and will satisfy just
the same if what you want is just a little of what the bulb can supply.
You can’t find garlic scapes all year round. They appear
only when there’s a plantation of hard neck garlic bulbs nearby. Garlic does not thrive successfully with too much
water. Just like tomato or other fruit bearing vegetables, they will rot when exposed to too much rain or water.
Garlic maybe produced in greenhouses. The controlled environment inside those types of gardens is ideal for
planting garlic or for any kinds of plant for that matter.
