to choose the biggest and the freshest bulb. You can determine this by looking at the stump where the stem was. The
one with the greenest stump is the freshest. If there’s none or if they are all newly harvested just pick the
largest head just the same.
While you’re preparing you’re garlic, preheating the oven at 4000 F will save you a little
time. Slice off the top portion of the individual cloves carefully and don’t disassemble the bulb. It should remain
intact. Then remove the thin outer skin, do not include the thick coverings.
Pour olive oil carefully, making sure that each individual cloves is evenly soaked. Place in
a tin foil and wrapped the garlic completely. Lay them in pan and load into the oven, for about a half hour or
until tender. Remove from the oven and open the tin foil. Let it cool for a few minutes and you can eat them when
they’re just about tolerable to the mouth.
